Flamed Wild Aubergine with Tahini

HELLO MR. AUBERGINE

There aren’t many things in life that are so neutral yet so dominant. Aubergine (or eggplant if you insist) is one of those things. Anything that you mix it with simply gives it a different taste, but still, the aubergine remains the “king” of the dish.

Aubergine on the Grill

For me, when grilled, it’s the best way to eat it. You can just grill it, peel it and eat it with some olive oil, lemon and salt, or you can take it to the next level and lift it up with some magic ingredients.

Tahini is one of those magic ingredients. This salad (some might say it’s a dip) is perfect at any time, on bread in the morning, alongside barbecue, or even as a “standalone” dish.

This mediterranean delight is best served with any kind of bread. Grilled pita bread with fresh garlic and herbs would be perfect.

LET’S COOK (AUBERGINE)

2 Large Aubergines
Handful of fresh mint leaves (chopped)
Handful of fresh coriander leaves (chopped)
Handful of fresh parsley leaves (chopped)
1/2 cup of tahini
1 clove of garlic
1 green onion
2 spoons of extra virgin olive oil
1 large lemon
1/2 tea spoon of ground cumin
Sea salt and ground pepper

Ingredients

Place the beautiful aubergines on a crazy-hot grill. Grill it for about 15 minutes on each side, until it look a bit burned and flat. Take them off the grill and let it cool for about 10 minutes. after they cooled off, peel them and chop off the top and bottom. Get rid of any juice extracts from the aubergines. Roughly chop the aubergine and place it in a large bowl, add the tahini and all other ingredients to the bowl and stir well with a fork. Drizzle some olive oil on top and that’s it.

LET’S COOK (PITA BREAD)

2 pitas
Handful of fresh parsley leaves (chopped)
3 cloves of garlic
3 spoons of extra virgin olive oil
Sea salt and ground pepper

Ingredients

Cut the pitta into half. Mix all the ingredients together and “crush” them with a mortar and pestle. you can also chop them and mix in a bowl. Spread it on the pita and place it on the grill until done.
